How is it made?

The soup is cooked normally then dehydrated and grinded into powder with nothing added in the process. Every house has its own bissara, but the ingredients are the same: fava beans, split peas, olive oil, garlic, cumin and olive oil. I use good quality ingredients from the shops like Slagerij Toubkal and I bring the olive oil from Morocco.

What is bissara?

Bissara is an earthy comforting soup very common to the Moroccan diet. The fava beans are earthy, the split peas slightly sweet, the garlic brings some umami and the cumin makes me simply happy. The olive oil finishes it with some bitterness. It is usually served as street affordable food and it is popular in winter. It is high in protein and fibers.

How long can they be stored?

As long as no water touches them and the bag stays sealed, they can last 4 months. I recommend to eat it within 1 month.

Can I order big quantities?

Yes, of course, I will make time to prepare it for you.

Does it have any dairy or meat?

No, the classic bissara is 100% vegan with no meat, milk nor eggs. For the Bissara Pro, it may contain milk, cereals, gluten, mustard, sesame seeds because of the soya protein isolate I add.

How did it happen?

I spend most of my time at my studio where there is no proper kitchen to make a good dish. The options I tried of instant food were either tasty, or healthy, or nutritious, but never the three of them. So I thought of the famous bissara soup that has the three, and I added 'intant' to it.

Where do you deliver?

I can deliver personally in Amsterdam. And big orders of more than 9 portions can be for anywhere in the Netherlands.
